Sobrino de Botín, is a Spanish restaurant in Madrid that was founded in 1725. It is the oldest restaurant in the world still working, according to the Guinness Book of World Records.

 

This restaurant was founded by Frenchman Jean Botin and his wife, and it was originally called Casa Botin.

 

The restaurant is called the Art Restaurant, as many artists, painters, and singers worked there, including the French painter Paul Cézanne, who worked as a waiter there in 1880 when he was a student, and the Spanish artist Francisco de Goya, who worked in the late eighteenth and early nineteenth centuries as a dishwasher. As a teenager in 1765, so was the Spanish singer Julio Iglesias.

 

The restaurant’s fame lies not only because it is the oldest restaurant, but it still uses the original recipes that it has been serving since its opening, including cochinillo asado, which is grilled pork, and sopa de ajo, which is eggs boiled in chicken broth and covered with mushrooms and garlic. The restaurant also offers Botin special dish, which features house-made onion sauce, chili pepper, garlic, dry white wine, paprika, tomato puree and bay leaf.

 

Botin Restaurant’s fire never goes out, as the oven has been burning without interruption for nearly three centuries, and the reason for this is that the oven needs to be ready for grilling and baking every morning, and because of the high heat in the kitchen, the owners of the restaurant created an outdoor place for guests to eat in the air, and they also moved the kitchen away from the guest reception rooms.

The restaurant has four floors that maintain the attractive atmosphere of traditional Spanish restaurants.
